Creamy Harvest Soup & Fried Bowtie Pasta

Some days, you just have to really make the effort to put some time and love into a meal. In return, that meal pays you back by filling you up in a warm and fuzzy way. Cooking doesn't have to be a rushed thing every single day, nor does it have to be a quick and easy hunger relief. If you have a day off or hours to kill, why not wind down by creating something worthwhile in the kitchen.

This Creamy Harvest Soup is complex but worth it! It's heartwarming and oh so amazing. And don't even get me started on these fried pasta bowties! I put more than I should've in my bowl. They are just too good. I'm a sucker for crunchy food!


I named this Harvest soup because it's got a little bit of everything: chicken, shrimp, crab, spinach, carrots. It can also be tweaked to be made with just chicken, or just shrimp, or just veggies! It's the perfect soup for you to pick and choose whatever meats, seafood, or vegetables you'd like to incorporate... 


The first thing I did was create a roux. I sauteed the vegetables until the onions were clear in color and then added flour. After the roux cooked for a couple minutes, I added all of the other ingredients.




Mini shrimp and diced crab, along with diced chicken to give the soup extra heartiness. 
The secret seasoning: dried Thyme!


While the soup bubbled away, I fried up these amazing pasta bowties. They turned out adorable! And with a sprinkle of grated parmesan, they were the perfect way to garnish this soup.





Creamy Harvest Soup with Crunchy Bowtie Pasta Garnish

Ingredients (serves 8 or more)
  • 4 tbsp Butter
  • 4 tbsp Olive Oil
  • 1 med Onion, diced
  • 1/2 cup Celery, diced
  • 2 Garlic cloves, minced
  • 1/4 cup All Purpose Flour
  • 4 cups Half and Half milk
  • 1 cup Carrots, shredded
  • 1 cup Chicken breast, cooked and diced
  • 1/2 cup Imitation Crab meat, diced
  • 1/2 cup Small Shrimp, peeled and deveined
  • 1 (14 oz) Can Chicken Broth
  • 2 cups Fresh Spinach, coarsely chopped
  • 1/2 cup grated or fresh Parmesan
  • 1/4 tsp Dried Thyme
  • 1/4 tsp Italian Seasoning
  • Salt & Pepper to taste

    For the Crunchy Bowtie Garnish
  • 1/2 cup bowtie pasta
  • 1/2 cup vegetable oil
  • Grated Parmesan to taste
Instructions
  1. Saute onion, celery, and garlic in butter and olive oil over medium heat. When onion is clear, add flour to form a roux. Stir and cook the roux for 1 minute.
  2. Add half and half, heat through.
  3. Add chicken, shrimp, crab, and carrots. Stir often until soup thickens.
  4. Add can of chicken broth. Stir until soup is at a simmer.
  5. Stir in spinach, Parmesan, and seasonings, cover and heat through.
  6. Serve with crunchy bowtie pasta!
For the Crunchy Bowtie Pasta Garnish
  1. Cook bowtie pasta according to directions on pasta box, cooking until al dente.
  2. Drain. Then dry pasta on a paper towel.
  3. Heat oil to approx. 350 degrees F.
  4. Fry the bow tie pasta for about 2 minutes, flipping them halfway.
  5. Drain on a paper towel.
  6. Sprinkle with grated Parmesan (optional)
