Loaded Baked Fries

Made an easy dinner today to be shared with a group of friends who came over to hang out! This dinner is cheap, easy to prepare, and a crowd-pleaser.



I bought a 10 lb. bag of russet potatoes for $3 at my local grocery store. We used bout 2-3 potatoes per person. Rinse them then slice them into wedges. Drizzle with olive oil (or vegetable oil) and season with salt and pepper. Arrange them on a foil lined baking sheet sprayed with cooking spray. Bake at 400 for 40 mins, turning them halfway. Slice green onions and cook bacon bits. When the fries are done, scoop them into bowls and sprinkle them with bacon, shredded Monterey-Jack Cheese, then pop in the microwave for 30 seconds. Garnish with green onions and serve with ranch or sour cream!

I made a few shortcuts my using the microwave to melt the cheese but for the most part the recipes remained true to their original sources: Oh So Delicioso and Martha Stewart!

For dessert, we enjoyed some mini cinnamon rolls! Aren't these ADORABLE?
