Blueberry Cornbread with Citrus Butter

The inspiration for this recipe literally comes from Disney World. At Docking Bay 7, in Galaxy’s Edge, Hollywood Studios - there is a dish that is served with blueberry cornbread. Now right now, our budget says we can't go anywhere near Docking Bay 7, in Galaxy’s Edge, Hollywood Studios. So we must make do.



The recipe starts off with a basic cornbread recipe but we’re adding a little razzle dazzle of sweetness by adding blueberries and honey. Served with a Citrus Butter, this recipe is so extra. The hybrid of sweet, savory, tart, and softness - we don’t know if we should eat this with some BBQ, as a dessert, or on it’s own for breakfast.


Blueberry Cornbread

  • 1 cup AP flour
  • 1 cup yellow cornmeal 
  • 2/3 cup white sugar
  • 1 tsp salt
  • 3.5 tsp baking powder
  • 1 egg
  • 1 cup milk
  • 1/3 cup veg oil
  • 1 cup of blueberries
Citrus Butter:
  • 1/2 cup butter, softened
  • 2 tbsp fresh orange juice
  • 2 tbsp fresh lemon juice
  • 1 tsp grated lemon rind
  • 1 tsp grated orange rind
