BBQ Chicken Turnovers

Hot pockets. Lean pockets. I love them. We all love them. I grew up eating them as an after-school snack and I still like the convenience of eating one for lunch at work sometimes. But you get kind of tired of frozen pockets of meat and cheese and sauce. And you often wonder if they're really as healthy for you as they claim to be.

Home-made savory turnovers are the way to go. They're like your favorite hot pockets but fresh out of the oven and filled with anything you like. I made BBQ chicken turnovers. Wait til you see how easy this one is!



Ingredients:

  • 1 Package Perdue cut cooked chicken, cubed into smaller pieces
  • 2 packages of pre-made thin pizza crust (or you can make your own!)
  • 1 cup of your favorite BBQ sauce
  • 1 small onion, diced into small pieces
  • 2 cups of shredded Mozzarella cheese
  • 1 egg
  • 1 tbsp water
  1. Pre-heat the oven to 375 degrees F.
  2. In a bowl, mix together the cubed chicken, onions, and BBQ sauce until well combined. Set aside.
  3. Pop open the can of dough and roll it out onto a large, clean surface. I placed some parchment paper on my counter top to prevent the dough from sticking to anything.
  4. Using a pizza cutter or a knife, cut the dough into equal sized squares (about 6).
  5. On one half of the square, place a small handful of Mozzarella cheese and then a scoop of the chicken mixture. Fold over the other half of the dough and press the edges to seal. Use a fork to crimp the edges shut. Place the turnovers on a cookie sheet wrapped in aluminum foil. Repeat for the second package of dough.
  6. In a small bowl, scramble the egg and the water. Brush the egg wash onto the turnovers before putting them in the oven.
  7. Bake for 10-15 minutes or until dough is golden brown.
